Coming Down The Pacific: Cerveceria Wendlandt Collab

Who are you?

Cervecería Wendlandt is a brewery located in Ensenada Baja California México, operating since 2012. We enjoy making beer and trying new techniques, yeasts, hops, or whatever is new on the market. We do this to have fun making the beers and to offer something different to the consumers.

What Sparked This Collaboration? 

When Diana, our Quality Coordinator at Wendlandt attended the Yeast Essentials course in 2023, she had the opportunity to meet Jake, White Labs’ Head Brewer, and all the cool crew members at White Labs.

 

He knew she was working at Wendlandt so he approached her to open the invitation for the collaboration. We didn’t doubt it for a second. We have so much respect for White Labs as a company, much admiration for all Chris White has given to the industry and also it is fun to have new friends and spend a day doing what we love to do.

What is a Pacific Ale?

A Pacific Ale is a highly refreshing beer with a light body and very pronounced tropical fruit flavor and aroma. A malt profile that contains moderate amounts of wheat and Australian and/or New Zealand hops.

 

Inspired by Stone & Wood Brewing in Australia. It was inspired by beers brewed close to the Pacific Ocean. Reflecting the lifestyle of having a paradise with sun, sand, surf, and a laid-back vibe. A beer perfect to highlight those sunny and sandy days!

What Flavors/Aromas Can I Expect From This Beer?

This beer was brewed using barley, wheat, flaked wheat and Australian hops as Galaxy, Vic Secret and Enigma. It’s cloudy and golden with a big tropical fruity aroma like passionfruit, pineapple and peach, as well as white wine notes from the enigma and a refreshing finish very easy to drink and enjoyable.

What strain is better for a Pacific Ale than a Pacific Ale Yeast?

 

Although not from Australia or New Zealand, this strain hails from the Pacific Northwest. It is a mild-ester producer while promoting various malt characters. Flocculation is high leaving a clearer beer than the typical hazy style.

Grapefruit Peel | Cantaloupe | Passionfruit

One of White Labs most popular Hazy Blends! Also really liked by Cervecería Wendlandt. Using strain was a no-brainer.

 

This blend of our favorite New England-style IPA strains is great for producing beers with a hazy appearance and tropical, fruit-forward esters. Producing dry, yet juicy beers, the mango and pineapple characteristics will lend to added drinkability. 

Any new Beer Trends/Science you would like to explore more?

Diana: “I had the opportunity to attend the Yeast Essentials course in 2023, where I learned and practiced new lab techniques and reinforced some of my previous knowledge. This course allowed me to meet new people from the industry whom I am still in touch with so that we can share our everyday experiences at work. I also had the opportunity to see all the equipment they had and have an idea of what we needed at the brewery.”
