THE SCIENCE BEHIND FERMENTATION

Fermentation impacts our everyday lives. From the yogurt for breakfast to the dough, cheese, & cured meats for pizza, fermentation is responsible for some of our favorite food and beverages.

Using microorganisms and fermentation techniques, we’re able to craft beers with a tasteful, exciting experimental twist!

WHAT IS YEAST?

Yeast is a single-celled organism. In brewing, yeast is used to convert sugars from the malt into alcohol, carbon dioxide, and flavor & aroma compounds. Without yeast, there would be no beer!

TABBERER IPA®

Named after the scientist, Horace Tabberer Brown, a British chemist who shared a passion for science and brewing. While working as a brewer in the late 1800s he set up a small lab onsite, which became the first record of a scientist using a microscope in a brewery.

Try a West Coast-Style OR Hazy-Style IPA

A WEST COAST-STYLE IPA

West Coast Style IPAs are known for clean & bitterness with a strong emphasis of highlighting the aroma & flavors of the hops such as pine, grapefruit of citrus. A clean and reliable yeast strain is the usual choice for this style of beer.

A HAZY-STYLE IPA

Hazy Style IPAs are known for their hazy appearance with a much more subtle & round bitterness. From whirlpool hops & dry hopping, more citrus, stone fruit, and other juicy characteristic shine. The yeast strain also plays a role in provide more flavors & aromas while helping the interaction between malt & hops.

LOUIS P LAGERTM

Also named after our favorite scientist, Louis Pasteur. Louis Pasteur scientific mission was to solve the "disease" of beer. He established that yeast was a living microorganism from his swan neck experiment.

Our Lager is a crisp easy drinking lager perfect for any occasion. Whether it's a clean American-Style, the Sweeter Corn Driven Mexican-Style, or a crisp Czech-Style.

Each yeast strain provides a different flavor, mouthfeel, and finish!

AN AMERICAN-STYLE LAGER

American-Style Lagers are known for a clean & crisp taste. The perfect summer beer where drinkability is key!

AN MEXICAN-STYLE LAGER

Mexican-Style Lagers can be differentiated with a slight sweetness. The yeast does a better job highlighting the sweet corn characteristics while producing a fuller mouthfeel creating a nice complexity to the lager style.

HANSEN HEFEWEIZEN®

Named after scientist, Emil Christian Hansen isolated the first lager yeast strain which was introduced into the brewing world on November 12, 1883. The most famous of all wheat beers is the German Hefeweizen, known for producing one of our favorite esters, Isoamyl Acetate, which gives the distinct flavor and aroma of banana.

AN AMERICAN-STYLE HEFEWEIZEN

American Style Hefeweizens are wheat based ales known to be cleaner and less phenolic than their german style counterparts. With more citrus & floral aromas to the forefront.

A GERMAN-STYLE HEFEWEIZEN

German Style Hefeweizens highlight the aromas & taste of bubblegum, clove, or banana. While wheat help create the haziness of this beer, these unique aromas and flavors are mainly driven by the yeast.

PASTEUR PORTER®

Named after our favorite scientist, Louis Pasteur. Not only known for Pasteurization, Louis Pasteur established that yeast was a living microorganism. He revolutionized fermentation by proving yeast was responsible for alcohol production.

Our Porter highlights the different styles from a Dry Clean Irish highlighting the malt, to more roast and dark undertones from an English style, to clean coffee-like bitterness in an American. All these different flavor and aromas all from switching a yeast strain!

Try An American-Style OR English-Style Porter

AN AMERICAN-STYLE PORTER

American-Style Porters highlight the darker chocolate and cleaner notes of the beer. More akin to tobacco, chocolate, and coffee notes are highlighted from this yeast strain.

AN ENGLISH-STYLE PORTER

English-Style Porters are better at highlighting the lighter roast and malty notes of a porter. Think milk chocolate or a lighter floral roast of coffee. A more rounder intensity, this is an easy-sipping approachable style of a porter.

Our brewery is used not only to make crowd favorite beers and styles, but for research and development to gain insight into new and innovative yeast strains along with industry classics. All our beer are analyzed through White Labs Analytical Lab. We keep our recipes and data open sourced to help educate and drive to make better beer.
